Tsoko Latik Cake
TSOKO LATIK
(CHOCOLATE & COCONUT CARAMEL)
Latik has two meanings in Filipino. The first is a caramel like you've never tasted! Our latik is made from coconut cream and muscovado sugar, boiled down to a rich and luscious caramel. The second meaning is coconut milk that has been slowly boiled until it forms curds, which then continue to fry in the resulting coconut oil. This creates a salty and coconut-y topping that provides a great counterbalance to the caramel latik. These two latik with our moist dark chocolate cake and dark chocolate fudge, both made with Auro, an artisanal chocolate hailing from the southern islands of the Philippines, creates a dessert that is deep and complex in flavor.

TURON
(BANANA & JACKFRUIT)
Turon is a favorite Filipino snack / dessert consisting of bananas and jackfruit wrapped in a spring roll wrapper and fried with sugar, creating a sweet and crunchy treat that is loved by all ages. Our cake takes the flavors and textures of Turon with a moist banana cake (fluffier than banana bread!) layered with jackfruit buttercream. Some candied walnuts gives it that caramel crunch!

BARAKO CRUNCH
(COFFEE CAKE WITH COFFEE BUTTERCREAM & CHOCOLATE CRUNCH)
This cake is definitely for the coffee-lover! Barako is a type of coffee grown in the Philippines that has a strong and bold flavor with some hints of fruitiness. Barako chiffon is layered with a light coffee flavored buttercream frosting. "Chocolate Soil" (crunchy bits of chocolate) provides some texture and balance to the cake.

MATCHA PASTILLAS
Pastillas is a milk candy very popular in the Philippines, traditionally made with carabao's milk boiled down with sugar to form a condensed milk and mixed with powdered milk to form a chewy candy. We take the milkiness of pastillas and put it in our buttercream, and match it with the earthiness and bitterness of a matcha-flavored cake. We add some texture by baking some pastillas until it becomes crispy and sprinkle that across the layers.

UBE COCONUT
Ube is perhaps one of the most recognizable Filipino dessert flavors. Made from purple yam, ube is sweet and earthy and all kinds of yummy. Ube with coconut is a classic combination, and our ube cake layers are kept in good company with our ube jam buttercream, coconut buttercream, and coconut flakes for some texture. Toasted coconut flakes are a perfect topping.

UBE S'MORES
We take a campfire favorite, s'mores, and add an ube (purple yam from the Philippines) twist to it. Ube cake is layered with graham cookie butter, chocolate fudge, and ube jam buttercream. A toasted marshmallow frosting envelopes the cake and adds some bitterness to balance out the sweetness. The only thing missing is the campfire!

CALAMANSI BLUEBERRY
The classic combination of berry and citrus is given some Filipino flair by using calamansi, the sweet and tangy Philippine lime. A light calamansi cake is layered with a blueberry filling and calamansi buttery. Definitely for the one unafraid of some tang!

CHOCO CHOCNUT
A favorite treat of Filipino kids (actual and at-heart), Chocnut, is a sweet, crumbly, and nutty candy made with chocolate and peanuts. A chocolate and peanut cake creates a Chocnut-like flavor, while a dark chocolate fudge balances out the sweetness of the Chocnut buttercream covering the cake.

Coconut is a flavor that is so prevalent in Philippine cooking and baking that it definitely deserves it's own dish where it is the star. A light and fluffy coconut cake is layered with coconut buttercream and some coconut flakes. Definitely for the coconut lover!
